Matcha Chia Pudding

Matcha Chia Pudding
- 1/4 cup chia seeds
- 1 tablespoon matcha powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/4 cup maple syrup (or sweetener of your choice)
- 1.25 cups soy milk
- Vegan yogurt
- In a medium mixing bowl, add chia seeds + matcha powder + vanilla extract + salt + maple syrup + soy milk.
- Whisk well to combine. Cover the bowl and let it rest for 20 minutes, or chill overnight.
- Once chilled, give it a quick mix and transfer to a serving jar. Top with vegan yogurt and chopped strawberries.
- Matcha chia pudding is ready. Enjoy!
