White Bean Alfredo Pasta
Introducing the most insanely creamy, crazy delicious, and protein-rich vegan white bean alfredo pasta you’ll ever taste! This easy-to-prepare dish is perfect for lunch or dinner, and is really versatile – you can mix and match your favorite vegetables (like broccoli, asparagus, etc) to roast alongside the pasta.
I personally love adding roasted green beans to this dish, as the crunchiness of the beans pairs perfectly with the creamy pasta.

White Bean Alfredo Pasta

Ingredients
- 250 gm. green beans (8.8 oz.)
- 2 tablespoons olive oil
- Salt
- Pepper
- 1 cup cooked white beans (I used cannellini beans)
- 3 tablespoons lemon juice
- Lemon peel
- 1 garlic clove
- 2 tablespoons hemp seeds (or use cashews, sunflower seeds, or pine nuts)
- 3 tablespoons nutritional yeast
- Salt
- Pepper
- 1 cup soy milk
- Cooked spaghetti (I cooked 250 gm. / 8.8 oz. spaghetti)
- Freshly chopped parsley / cilantro
- Chili flakes
Instructions
- Add green beans to a baking sheet. Drizzle olive oil + salt + pepper. Coat well and roast for 30 minutes at 230 C (445 F), flipping halfway.
- Once roasted, set aside.
- To a blender/grinder, add cooked beans + lemon juice + lemon peel + garlic clove + hemp seeds + nutritional yeast + salt + pepper + soy milk.
- Blend until smooth and set aside.
- Cook the spaghetti according to the package instructions. Once it's cooked, quickly transfer to a large mixing bowl and add the roasted beans + white bean sauce.
- Mix well using a spatula. Transfer to serving bowl(s) and garnish with freshly chopped parsley/cilantro and chili flakes.
Notes
- Feel free to roast a variety to veggies (zucchini, broccoli, asparagus) to add to the pasta.
