Heat a large pan over medium heat and add the 2 tablespoons of oil.
Once the oil is hot, add the crumbled tofu to the pan and stir-saute for 2-3 minutes.
Add the onion powder, garlic powder, turmeric powder, smoked paprika, salt, black salt, and black pepper to the tofu. Mix well and continue to stir and cook for an additional 4-5 minutes, allowing the spices to infuse into the tofu.
Stir in the nutritional yeast, tahini, and oat milk. Mix thoroughly and cook for about 2 minutes until the mixture becomes creamy and well-combined.
Remove the pan from the heat.
In a separate pan, toast the sourdough bread slices on both sides with a touch of oil until they are golden and crispy.
Once the bread is toasted to your liking, generously spoon the creamy tofu scramble on top.
Drizzle Sichuan Chili Oil evenly over the tofu scramble for a spicy kick, and garnish with freshly chopped green onions for a burst of color and freshness.
