  1. Combine Wet Ingredients: To a large mixing bowl, add 1/2 cup powdered sugar, 1/2 cup brown sugar, 1 teaspoon salt, 1 teaspoon vanilla extract, 1/2 cup oil, and 1/4 cup soy milk.
  2. Mix Base: Mix well using a whisker until it’s smooth.
  3. Add Dry Ingredients: Add 1.5 cups all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon baking soda. Using a spatula gently fold and mix until they’re well combined.
  4. Add Chocolate: Next, add 1/2 cup chocolate buttons (or chips) and fold the dough until well combined.
  5. Chill Dough: Seal the bowl and let it chill in the fridge for 24 hours.
  6. Prepare Cookies: After 24 hours Scoop the cookie dough and transfer it to a parchment-lined baking sheet. I baked only 6 cookies at a time (you can make 12 cookies in total).
  7. Bake Cookies: Bake at 150°C / 300°F for 30 minutes. Note: Different ovens bake differently, so you might have to fine-tune this timing (27 to 33 minutes).
