Hi friends! I’m excited to share a recipe that has been a recent favorite of mine: Chili Garlic Jackfruit Noodles.

This dish brings together a delightful combination of fiery spiciness, a subtle garlic touch, and the satisfyingly meaty texture of jackfruit.

Prepping this noodle requires basic ingredients that you likely already have in your kitchen, and it comes together quickly, taking less than 20 minutes.

It’s a  very convenient option for a satisfying lunch or dinner when you’re short on time.

The best part is that you can easily customize this noodle by adding your favorite vegetables.

Whether you prefer the crunch of bell peppers, the earthiness of mushrooms, or any other veggies, you have the freedom to tailor it to your liking.

Chili Garlic Jackfruit Noodles

Ingredients

  • 2 tablespoons oil
  • 6 cloves garlic (chopped)
  • 1 medium onion (sliced)
  • 300 gm. cooked or canned jackfruit (sliced or lightly mashed, 300 gm = 10.5 oz)
  • Salt (adjust to taste)
  • Pepper (adjust to taste)
  • 1 teaspoon jaggery (or sugar)
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 3.5 tablespoons sichuan chili oil
  • 300 gm. noodles (cooked according to package instructions, 300 gm = 10.5 oz)
  • Green onions (freshly chopped)

Instructions

  • Set a large sauté pan over medium heat. Add oil.
  • Once it's hot, add garlic + onion and stir-sauté for 2-3 minutes, or until they're translucent.
  • Then add jackfruit and stir-sauté for 4-5 minutes, or until they're golden-brown at the edges.
  • Next, add salt + pepper + jaggery (or sugar) + soy sauce + apple cider vinegar + Sichuan chili oil.
  • Mix well and cook for 2-3 minutes.
  • In the meantime, cook the noodles in a saucepan - according to the package instructions.
  • Once it's cooked, drain and transfer the noodle to the sauté pan (use tongs to drain and transfer quickly, see video).
  • Mix well using tongs and cook for 1-2 minutes.
  • Chili garlic jackfruit noodle is ready. Serve (garnish with more Sichuan chili oil if you like), and enjoy!

    Made this for lunch – I had 4 cans of jackfruit and used them all up. Was so good.

    Note to self: Use more chili oil.
